Recipe: Roasted Lemon Chicken















I made this for the family last night and it was a hit. The kids thought it was a little
lemon-y but they cleared their plates... which is rare. I thought I'd share. -Erin

Roasted Lemon Chicken
Ingredients:
2 tbsp. lemon zest
1/3 cup freshly squeezed lemon juice
2 cloves garlic, crushed
2 tsp. fresh thyme leaves
1 tsp. fresh rosemary leaves, finely minced
1 tsp. salt1 tsp. black pepper
2-4 lbs. of bone-in, skin-on chicken thighs or drumsticks
2-3 tbsp. melted butter

Directions:
Combine the lemon zest, lemon juice, garlic, thyme, rosemary, salt and pepper in a large zipper-lock plastic bag.  Seal the bag and shake well to blend.  Place the chicken pieces in the bag with the marinade, pressing out excess air and sealing once more.  Refrigerate and let marinate for 2 hours.

Preheat the oven to 425˚ F.  Remove the chicken pieces from the marinade and transfer to a baking dish, skin-side up, reserving the leftover marinade.  Brush the top of each piece of chicken with melted butter.

Bake for 50-55 minutes, until the skins are crispy and well-browned.  Halfway through baking, pour the remaining marinade over the chicken pieces in the baking dish.  Once fully baked, cover loosely with foil and let rest 10 minutes before serving.  Transfer to a serving platter, garnish with lemon slices and serve.

I want to take this opportunity to brag about my wife for a second. I think she is brilliant... I am truly in awe of her creative talent. I laughed about her whole blogging thing when she started but it really is a great way for people to get to know her and understand her style, her passions and really see some of the things she can do with her talent etc. I would encourage anyone who wants to learn a thing or two about my amazing wife to check her blog out from the very beginning (keep clicking "older posts"). Breakfast Bonus!

The best thing I've done for my health in the past ten years has been to switch to Kashi cereal! You have to get the red box (otherwise it's not as good for you) but it's so full of protein that I don't get hungry for a long, long time! Eating it with fruit helps! Thanks, Maggie, for the tip. Trapped - A film about the bottled water industry and why drinking bottled water makes you an asshole.

For the Bible Told Me So - A film about Christianity and Homosexuality (was going to finish with another witty remark about assholes but...)

Movies: Jeff, Who Lives at Home

I loved "Jeff, Who Lives at Home". A great character sketch flick about 2 brothers and a mom - it all takes place in one day. think indie, slow moving, smart, creative...great ending. Jason Segel, Ed Helms, Susan Sarandon - all were outstanding. -Jessie



Books: The Hunger Games

i know some of you have probably already read these, but for those who haven't, the hunger games series is awesome! really fun, fast paced books that only take a couple days to read. anyways, with all the movie hype going on now, if anyone has read them or is planning to, maybe we can get togetether to watch the movie???? -Angel

Books : The Shallows

Just finished The Shallows: What the Internet is doing to our Brains. 
It's not an anti-internet book. Just an interesting look at how our brains change depending on what we do with it. I especially loved the chapter about the beginnings of books! I'd give it four stars (out of 5) but I am just beginning to read non-fiction so my stars may be out of whack a bit.

This is the beginning!

Hey Family...this is an experiment.  It will be up to all of us to make it a successful one! Most of us have a whole lot to say so this SHOULD be a rousing success, right?

I'm new at this so I may have already messed it up.  The idea, though, is for us to be able to post recipes, movie suggestions, book suggestions, comments, opinions, bullshit, health tips, products we love etc.  It'll be a little bit different than Facebook because it's just the Deegan Family for one and for another, the posts may tend to be longer and more in depth (like recipes).
