After I made the sauce and let it set in the fridge, I grilled up some chicken breasts marinated in lemon, olive oil, and oregano (but not too long or the lemon will cook the chicken!) and got out some traditional Greek fixins. I found some AMAZING kalamata olives at the Jewel that are marinated in Napa Valley wine. mmmmm.
after chopping up some romaine, tomatoes, the olives, and adding crumbled feta, I just warmed up a pita on my stove burner and.....
OPA!! I had my big fat Greek pita!! The nice thing about this is if you grill up a bunch of chicken at a time and just buy the tzatziki instead of making it, you have a really easy (and healthy) lunch all week long. Here's the recipe for the tzatiki sauce:
2 cups Plain Greek Yogurt
1 cup Cucumber, diced small
1-2 tablespoons Fresh Dill, chopped
1 clove Fresh Garlic, Pressed through a garlic press of minced
1 tablespoon Fresh Lemon Juice
3/4 tablespoon White Wine Vinegar (or white vinegar can be used)
1/4 teaspoon Kosher Salt
In a small bowl, combine ingredients and stir. Make ahead of time so flavors can marry.
